Can you believe that Thanksgiving is just around the corner? Maybe I’ll believe it once I get home to below-freezing temperatures. I’m shivering just thinking about it!
If you’ve been stressing about what to serve the vegetarian, vegan and/or gluten-free eaters at your Thanksgiving table, I hope this roundup eases your troubles. All of the recipes are meatless and the recipes that are also gluten free and/or vegan are labeled as such.
I’m speaking for myself here, but please don’t worry about having a meat-like substitute for us vegetarians, or even a fancy designated entree. I’m happy enjoying a plate of hearty sides (and dessert afterward, of course).

No. 1: Creamy Roasted Brussels Sprout and Quinoa Gratin
Easily gluten free
This creamy, veggie-packed gratin includes quinoa for some protein! It’s a side dish that everyone will enjoy.
No. 2: Spinach Artichoke Lasagna
The vegetarians will have to elbow the meat-eaters to get to this one before it’s gone. It’s hearty comfort food that won’t weigh you down. Who says you can’t have lasagna at Thanksgiving, anyway?
No. 3: Arugula and Cremini Quiche with Gluten-Free Almond Meal Crust
This quiche would be a great Thanksgiving brunch option or a hearty, vegetarian addition to the Thanksgiving table. You can make the quiche earlier in the day, if you’d like. It’s great served warm or at room temperature.
No. 4: Easy Brown Rice Risotto with Mushrooms and Fresh Oregano
This baked brown rice risotto requires some oven space, but minimal effort. It reheats well, too.
No. 5: Sweet Potato, Kale and Chickpea Soup
This sweet and spicy vegan soup gets rave reviews. I especially love it because the farro and kale retain their texture instead of turning to mush.
No. 6: Thai Curried Butternut Squash Soup
Gluten free and vegan
Here’s a beautiful, spiced, vegan bisque that seems super luxurious thanks to the puréed squash. It would make quite a statement at the table.
I love this crispy, maple-sweetened cornbread! The cranberries make delicious polka dots.
No. 8: Rosemary Parmesan Sweet Potato
This simple side is outrageously delicious. It’s just a baked sweet potato with a pat of butter and a sprinkle of green onions, Parmesan and rosemary.
Here’s a fun little appetizer to serve before dinner, or a snack to make with leftover cranberry sauce. These were a hit with my family last year.
No. 10: Raw Kale and Brussels Sprouts Salad with Tahini-Maple Dressing
Man, this salad is good! It’s sort of slaw-like and will keep well for a few hours if you want to make it in advance.
No. 11: Autumn Kale Salad with Fennel, Honeycrisp and Goat Cheese
I don’t mean to brag (ok, I do), but this salad gets rave reviews. One commenter’s husband claims that this is the best salad he’s ever eaten. It’s a somewhat unusual combination of fennel, apple, kale and goat cheese that is somehow so right!
No. 12: Roasted Delicata Squash, Pomegranate and Arugula Salad
This salad is so colorful and perfect for a fall holiday. The salty feta balances out sweet winter squash. (Roasting delicata squash is easy because you don’t have to peel it first!)
No. 13: Favorite Green Salad with Apples, Cranberries and Pepitas
Gluten free and easily vegan
This green salad is so fresh and perfect for fall! It was a big hit at Friendsgiving this year, too.
No. 14: Lebanese Lemon-Parsley Bean Salad
Gluten free and vegan
If you’re worried about the gluten-free vegan getting enough food, serve this salad! It’s filling, fresh and totally irresistible.
No. 15: Honey Mustard Brussels Sprout Slaw
One commenter told me that this slaw garnered applause at his Thanksgiving dinner last year. It’s crunchy, fresh, unexpected and so tasty.
