A little bird told me there’s a big football game coming up, which got me thinking, “What would my dream Super Bowl spread look like?” Here it is.
Let’s start with cocktails, of course, then move on to appetizers, fresh salads and main dishes, including tacos, chili, pizza and burrito bowls. Then we’ll top it all off with one more drink, to quench both the victorious and the defeated. May the best team win!
1) Blood Orange and Pomegranate Sparkling Sangria
Potentially gluten free and vegan (choose wine and brandy carefully)
“Made this last night for a Superbowl party. Everyone loved it! Thanks Kate.” – Peggy
2) Spicy Grapefruit Margaritas
Gluten free (be sure your tequila is 100% agave) and vegan
“I’m not a margarita person but holy cow these are delicious!! I had a big bag of pink grapefruit and well what is a girl to do? Limes from our tree and well it was a mandate of sorts! I’m planning on drinking up before the doctor realizes that I should be on statins because then no more grapefruit!!!! Cheers!” – Nancy
3) Peanut Dipping Sauce
Gluten-free option and vegan option (see notes)
“I love your peanut sauce and it’s my go-to for Asian meals! I joke to my husband that it’s so good, I want to bottle and mass produce it :)” – Laura
4) Vegan Chipotle Carrot Queso
Gluten free and vegan
“I followed the recipe exactly and used the larger amount of adobe sauce. Huge hit with my non-vegan husband. He even commented that he doesn’t get tired of the flavour, as with a cheese-based sauce. This will definitely be a standard in our house. Thank you!!!” – Laureen
5) Simple Seedy Slaw
Gluten free and vegan
“Your recipes are so reliably delicious. I made this tonight and it is a keeper. Simple and tasty. I had extra red bell peppers so I sliced them thin and added them. So good!” – Brooke
6) Lebanese Lemon-Parsley Bean Salad
Gluten free and vegan
“I do not often leave comments after making recipes I find online (I know … shame on me!!); but your Lebanese Lemon-Parsley Bean Salad was so successful that I had to thank you! The flavors were incredible – balanced, assertive, and addictive. It makes a lot so I shared (but only with people I really like). Every recipient called to demand the recipe.” – Heather
7) Sun-Dried Tomato, Spinach and Quinoa Salad
Gluten free and vegan
“I have made this salad twice in a week it is that good – easy and delicious!” – Terri
8) Roasted Cauliflower and Lentil Tacos with Creamy Chipotle Sauce
Gluten free (if you use gluten-free tortillas) and vegan option (see notes)
“Wow. My husband doesn’t think its a meal unless there is 90% meat on his plate. He was very skeptical while I was making these, but really turned around after tasting them. They were delicious! He said he didn’t even miss the meat. Trying to be healthy in 2016! Thanks for the help with an awesome recipe!” – Sherry
9) Portobello and Poblano Fajitas
Gluten free (if you use gluten-free tortillas) and vegan (if you skip the feta)
“These are ridiculously good, I’ve now eaten them four times in two weeks, I believe I have developed a habit. Thanks so much for sharing :D” – Emily
10) Spaghetti Squash Burrito Bowls
Gluten free and vegan
“Made this recipe for my brother’s birthday dinner and everyone loved it, including my 9 and 3 year old, who will eat any and every vegetable now, thanks to your blog. It’s amazing how kids can learn to appreciate all kinds of vegetables. Your recipes really help with that, I believe. Thanks, Kate!” – Lisa
11) Roasted Butternut Squash Tacos
Gluten free (if you use gluten-free tortillas) and vegan
“I’ve been cooking vegetarian meals for my carnivore husband for 8 years now. Tonight when I served him this, he said “This is the best thing you have ever made. It tastes like a restaurant meal. And if it were a restaurant meal, it’s something I would order every time I went to the restaurant.” Thank you!” – Cat
12) Sweet Potato & Black Bean Veggie Burgers
Gluten free patties (just choose your buns/toppings carefully) and vegan
“AMAZING! I’m a student in nursing school so time is definitely not on my side. This was a wonderful bulk meal for the week. Made exactly 8 good sized burgers. Paired it with the kale salad from your “Kale, Black Bean and Avocado Burrito Bowl” recipe and it was so yummy. thank you for sharing!” – Callie
13) Homemade Vegetarian Chili

Laura @ Raise Your Garden
Or you could be a Puppy Bowl fan like me!!! But that doesn’t mean you still can’t make all these yummy recipes. Plus……last year ordering a pizza took over 2 hours and it was yucky.

My mouth is watering looking at these recipes! The only trouble I’m going to have now is deciding which one to try first!! I love your recipes Kate – and just so you know I tend to find food blogs really annoying but I like how you get to the point and give us the recipes without overdoing the pictures or word count. There’s nothing worse than looking for a recipe and having to read an essay before you get to it. Clearly you have a talent and passion for vegetarian food. Thanks for sharing!

These are the types of food I want to eat for a football game- bright and vibrant, indulgent and healthy, and with a healthy helping of spice. I’m eyeing those cauliflower tacos in particular.

What, no stadium made of out of skweeze cheese and pretzels? If I saw those poblano fajitas at a party, I’d be one happy lady (who hopes the NFL will do more about brain injuries).
