Mac & Cheese with Roasted Broccoli

Behold! My first attempt at making homemade macaroni and cheese was just as quick and tasty as Erin promised. I used whole wheat pasta shells and reduced fat sharp cheddar cheese, so it didn’t knock me into a creamy carb coma afterward.

I also tried roasting broccoli for the first time—yum! The combination of cheesy pasta and crisp, oven-baked broccoli has become my new favorite weeknight comfort meal.

    Roasting vegetables is my absolute favorite way to eat them! It really brings out the flavor. Besides broc, I love to roast Brussels sprouts and asparagus.

    yum, I love roasting vegetables, but have never roasted broccoli before… will definitely try this!
