This soup recipe was a long time coming! Over the years, I made some lackluster lentil soups that never saw the light of day on this website. No vegetarian food blog would be complete without a proper lentil soup, though, so I perfected one of my own.
Here it is. My lentil soup is made with mostly pantry ingredients but includes hearty greens and a squeeze of lemon for bright, fresh flavor. It’s seasoned with a few of my favorite spices and plenty of freshly ground black pepper. Honestly, it’s the best lentil soup I’ve ever had.
The original title of this recipe was “Spiced Vegan Lentil Soup,” which is accurate, but a mouthful. With over 500 five-star reviews, I think it’s safe to call this the Best Lentil Soup. Period.

This simple vegan lentil soup recipe comes together quickly with mostly pantry ingredients. Be sure to have your ingredients prepped and ready before you start cooking! Recipe yields four large bowls of soup, or six more modest servings.
Ingredients
- ¼ cup extra virgin olive oil
- 1 medium yellow or white onion, chopped
- 2 carrots, peeled and chopped
- 4 garlic cloves, pressed or minced
- 2 teaspoons ground cumin
- 1 teaspoon curry powder
- ½ teaspoon dried thyme
- 1 large can (28 ounces) diced tomatoes, lightly drained
- 1 cup brown or green lentils, picked over and rinsed
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon salt, more to taste
- Pinch of red pepper flakes
- Freshly ground black pepper, to taste
- 1 cup chopped fresh collard greens or kale, tough ribs removed
- 1 to 2 tablespoons lemon juice (½ to 1 medium lemon), to taste
Instructions
- Warm the olive oil in a large Dutch oven or pot over medium heat. One-fourth cup olive oil may seem like a lot, but it adds a lovely richness and heartiness to this nutritious soup.
- Once the oil is shimmering, add the chopped onion and carrot and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
- Add the garlic, cumin, curry powder and thyme. Cook until fragrant while stirring constantly, about 30 seconds. Pour in the drained diced tomatoes and cook for a few more minutes, stirring often, in order to enhance their flavor.
- Pour in the lentils, broth and the water. Add 1 teaspoon salt and a pinch of red pepper flakes. Season generously with freshly ground black pepper. Raise heat and bring the mixture to a boil, then partially cover the pot and reduce the heat to maintain a gentle simmer. Cook for 25 to 30 minutes, or until the lentils are tender but still hold their shape.
- Transfer 2 cups of the soup to a blender. Securely fasten the lid, protect your hand from steam with a tea towel placed over the lid, and purée the soup until smooth. Pour the puréed soup back into the pot. (Or, use an immersion blender to blend a portion of the soup.)
- Add the chopped greens and cook for 5 more minutes, or until the greens have softened to your liking. Remove the pot from the heat and stir in 1 tablespoon of lemon juice. Taste and season with more salt, pepper and/or lemon juice until the flavors really sing. For spicier soup, add another pinch or two of red pepper flakes.
- Serve while hot. Leftovers will keep well for about 4 days in the refrigerator, or can be frozen for several months (just defrost before serving).

Fabulous! My husband poo-poos vegetarian recipes, so to get him onboard I used chicken stock instead of veggie and I added a bit of chicken sausage (I browned and removed the sausage in the pot before adding the onions, to build flavor, and added it back in at the end with the kale). Just made a batch. Followed your instructions, but added some potatoes and celery seed. The broth is very flavourful! It is really quite delicious, and easy to make, and not too thick, not too thin. I have always loved lentil soups. I plan to make this again, perhaps trying it with celery, a fennel bulb and red peppers added at the beginning.

Red lentils don’t tend to hold their shape as well. If you try it, I would suggest cutting down the amount of liquid and watch the timing closely. Won’t likely take as long.

Missy, I made this soup as written, but used Imagine organic low sodium vegetable broth (560 mg sodium per quart), Muir Glen organic no salt added diced tomatoes (25 mg sodium per 14.5 oz can times two), and did not add any salt. Total 610 mg sodium per entire pot which equals 4 large servings at 153 mg each or 6 moderate servings at 102 mg each. It was really delicious and I will definitely make it again.

Delicious! I used roasted tomatoes in mine, which added a little smoke to the flavor. If you are not counting calories, this soup screams for a dollop of sour cream. Very smooth and appealing texture. ANd oh yes, I threw some baby spinach in too!

Fantastic soup! I stumbled on this after searching for dinner options at work. My partner and I polished off the lot. We have only recently started meatless Monday’s in our home and my husband complains about it everytime, but he complained about this one the least! Me on the other hand, think this is the best lentil soup, and my 10 month old loved it too!
Will be going into the books for sure! Only change I made was I used arugula which was surprisingly delicious, since I dont like kale and life is too short to eat food you don’t like ( unless you’re my husband and then your forced to eat meatless once a week)

Actually is the BEST lentil soup – the flavor combinations are fantastic. I think after making it the first time I added a little more red pepper flakes to give it more of a kick, but other than adding more heat, the flavors are just right.
I went three weeks (during the winter) making this as my meal prep for the week. It saves well, it is very filling, and warming to the soul in the depressing winter of Minnesota.
I did try the recipe with quinoa instead of lentils once. The quinoa distorted the flavor, for whatever reason. It was actually better after being refrigerated a couple days, but I would stick to the lentils – Kate knows best!

It doesn’t have any nutrition listed. If I’m going to make soup my main meal that’s important. We don’t ingest enough. At least I don’t. Putting half the soup and pureeing it makes extra steps. I don’t like cooking any longer now that I’m disabled. Thanks for great explanations.

Amazing. I’ve always been hesitant to make lentil soup because it is so bland most of the time. This soup is very flavorful. It makes me want to become a vegatarian. Haha. I made small changes. First the salt. You don’t say what kind of salt. I leave salt out of recipes or cut in them in half. I think it ruins dishes. I used 1/2 tea of pink sea salt and it was perfect. Second, I used my immersion blender instead of a regular blender. That’s all I did different. It is so good.

The canned tomatoes and vegetable broth. You can choose low sodium/no salt added and reduce the amount of salt you add to the overall soup as instructed.

Ok, so I would be remiss were I not to come back and give a review to this recipe. This is the recipe that introduced me to your blog and I’ve made this soup at least 15-20 times over the past two years. I bring it to parties/potlucks and people absolutely love it. People ask me for the recipe. It’s a home run. The only change that I’ve made is that I use the entire batch of collard greens rather than adding just one cup (After removing the stems, I stack the leaves and roll them and cut long stripes of collard greens which then all go into the soup. I adjust the water/broth as necessary). Solid dish. Bravo!

I don’t like lentils. I don’t like curry. Not so hot on kale, either. But when a friend visited for a week last spring, I had to come up with some vegetarian meals for her plant-based diet. Gulp! I tried this recipe and it was a hit with her, and I discovered I loved it. Have made it several times since. When I don’t have kale, I add some thawed, frozen spinach and it works just fine. Thanks for this recipe, and the time it took you to perfect it.

Delicious! I just added a whole peeled potato to blend at the end and add thickness. Also, I had some celery so I added at the beginning with the onions. I used spinach for my greens. Deliciosa!

This has been my go-to recipe for lentil soup since I found it about a year ago. My teenager daughter asks me to make it! I use a hand held blender to skip the transfer mess. I also scale it down. The buttons to scale up are very cool. Tasty & Healthy…Thank you.
