We’re going back to basics this summer, so let’s talk about avocado toast! Creamy avocado spread onto well-toasted bread is one of my favorite quick meals. Actually, it’s one of my favorite meals in general. It’s so delicious, I’d call it one of life’s simplest pleasures.
As usual, I have some strong opinions on what makes the best avocado toast. So today, I thought I’d share my basic recipe, with my best tips and favorite variations.
If you are a stranger to avocado toast, you’ve been missing out and we must remedy this situation immediately.
If you’re well-familiar with the joy of avocado toast, I hope you find some helpful tips and some fun new ways to change up your toast. Onward!
How to Make the Best Avocado Toast
1) Pick great avocados
You want ripe but not over-ripe Hass avocados. Look for avocados that yield a bit to a gentle squeeze, but avoid using avocados that are mushy or stringy on the inside. If you run into any bruised or brown bits when you cut them open, scoop those out and discard before mashing the rest.
2) Buy good bread and toast it well
I think sturdy, thick-sliced, whole grain bread make the best avocado toast. Golden, well-toasted bread offers a sturdy base and a crisp, shattering contrast against the creamy avocado.
3) Mash your avocado separately
Mashed avocado is more creamy and luxurious than sliced avocado (think guacamole vs. plain avocado). But don’t mash it on the toast! You risk poking holes in your toast or smashing it. Cut your avocados in half, remove the pit, scoop the flesh into a bowl or onto the side of your plate, and mash it up with a fork.
Mashing a lot of avocados at once? Use a potato masher or pastry cutter instead of a measly little fork.
4) Don’t forget the salt
You’ll want to mix in at least a pinch of salt per avocado half. Bonus points? Finish your avocado toast with a light sprinkle of flaky sea salt.
Avocado Toast Bonus Tips
Here are a few easy ways to take your avocado toast up a notch. Pick one or a few!
- Add garlic: Lightly rub a peeled raw garlic clove over the top of your toast before adding the avocado, or mix a tiny pinch of garlic powder into the avocado.
- Add fresh leafy herbs or your favorite herbed sauce: Chopped fresh basil, cilantro, dill or parsley are all good with avocado. So is a drizzle of pesto, zhoug sauce (spicy cilantro sauce), or chimichurri.
- Put an egg on it: I love to top my avocado toast with a fried egg for extra protein (example here). You can do a poached egg or scrambled egg if you prefer.
- More extras: Quick-pickled onions or radishes or jalapeños, your favorite hot sauce, or a sprinkle of sliced cherry tomatoes.
Avocado Toast Variations
Here are my official favorite avocado toast variations, shown from top to bottom.
Everything Bagel Avocado Toast
Add a generous sprinkle of everything bagel seasoning on top of your avocado toast. Make your own with my everything bagel blend recipe, or buy it at Trader Joe’s or Williams-Sonoma (affiliate link). These seasonings tend to be salty, so be careful not to over-salt your avocado.
Loaded Avocado Toast
Mix chopped fresh radish, green onion, jalapeño (seeds and ribs removed) and toasted sunflower seeds. Sprinkle generously on your toast.
Tomato-Basil Avocado Toast with Balsamic Drizzle
If you have great tomatoes on hand, this is delicious. Top your avocado toast with sliced tomato, add a light drizzle of high-quality thick balsamic vinegar or designated balsamic glaze, and some torn fresh basil leaves.
Cafe Gitane-Style Avocado Toast
This NYC café supposedly started the avocado toast trend. Spread a thick layer of mashed avocado over your toast, spread it so it’s smooth and mounded, then drizzle with 1 teaspoon extra-virgin olive oil, 1 teaspoon lemon juice, and a generous sprinkle of red pepper flakes and flaky salt.

Avocado toast is creamy, crisp and so satisfying. It’s a delicious and simple breakfast, snack or light meal! It’s best consumed immediately, since the avocado browns over time. Recipe as written yields 1 slice of basic avocado toast; multiply as necessary.
Ingredients
- 1 slice of bread (I like thick-sliced whole-grain bread best)
- ½ ripe avocado
- Pinch of salt
- Optional: Any of the extra toppings suggested in this post
Instructions
- Toast your slice of bread until golden and firm.
- Remove the pit from your avocado. Use a big spoon to scoop out the flesh. Put it in a bowl and mash it up with a fork until it’s as smooth as you like it. Mix in a pinch of salt (about ⅛ teaspoon) and add more to taste, if desired.
- Spread avocado on top of your toast. Enjoy as-is or top with any extras offered in this post (I highly recommend a light sprinkle of flaky sea salt, if you have it).

Make it gluten free: Use gluten-free bread. My assistant Megan recommends Canyon Bakehouse 7-Grain Bread, which she buys at Natural Grocers.

I make a no knead rustic bread that I use for the toast. Slice it 1/2″ thick. I mash the avacado and add juice of 1/2 lemon, seas salt and fresh ground pepper. I always have plum tomatoes on hand and will chop one up, drizzle with evoo, and another splash of lemon juice and pinch of sea salt. I spread the toast with the mashed avacado, top that with the chopped seasoned tomatoes and add everything bagel seasoning to that. My everyday breakfast. OMG, what a mistake it was to make this! I’m so full I could just…you got the idea. Toasted 5 grain bread (2 pieces), rubbed it with garlic, added the mashed avocado with salt and pepper, slice of cheddar, egg fried medium, crumbled bacon and halved tomatoes, topped it with the second piece of avocado toast that I sprinkled with pepper flakes. Problem was I made two and ate them both it was so good. No more meals today…I have to go walk 15 miles to burn this one off! Don’t beat me up, but salt is a key ingredient with the avocado and tomatoes.

I like to mash a half of an avacado with a teaspoon of mayonnaise and touch of salt to taste. I spread the mashed avacado on a piece of your favorite bread toasted, then layer sliced tomatoes on top with a slight touch of salt on top for the tomatoes. My favorite.

I’ve never made Avacado anything before but know it’s a healthy fat and many people make a spread for toast & I found your recipe. I made it and added cracked pepper and salt and it didn’t taste like I expected so I added some lemon juice not only for taste but I knew it would keep it from browning and I was going to gave left overs. It still wasn’t what I expected so I got out the Frank’s Hot Sauce & added a few shakes. I decided it needed something else and I don’t have any Everything Bagel Seasoning so I grabbed some more lemon juice. I’m going to look for Everything Bagel Seasoning because I’m still not a fan. I’m wondering why you add EVOO instead of Avacado Oil? EVOO has a much stronger taste. I was going to try the Avacado Oil but I thought I’d ask why the EVOO before I ruined the batch I have left over. I use the Avacado Oil to make my own mayo & it’s so much better than using EVOO. Next question is how long will the spread keep in the frig?

I didn’t have fresh avocado but instead I had frozen chopped avocado that I thawed and added salt and pepper with a squirt of the basil in the tube and crumbled feta. I slightly mashed the avocado and mixed those ingredients in and topped my well done nutty toast with rocket (arugula) and fried egg with the avo mixture on top with tiny chopped red onion crowning it! I liked your recipe! (My mom used to make me avocado toast when I was a little girl, half a century before it became a trend!) These days, I have to limit sodium, so I sprinkled on Mrs. Dash’s “everything but the salt” seasoning and then added my own small amount of salt–you can’t skip the salt, as it makes avocado really pop! Thanks for all the new ideas! Gonna try the balsamic drizzle for sure. We eat avocado toast pretty much every day for one meal or another. Our go to is with a thin slather of hummus on top of Trader Joe’s cracked wheat sourdough bread. It was surprisingly delicious. I used a nice grainy bread and toasted it well. I added salt and pepper to my Avacodo when mashing and then when I spread it on my toast – I topped with bagel spice. I also read somewhere that somebody recommended grated egg on top. I did this and found it to be quite yummy. My only problem was trying to keep the egg bits on the toast while I was eating it. I use frozen avocado that is thawed and mashed with a smidge of salt and top it with Everything-Bagel seasoning (Trader Joe’s is available on Amazon). In the summer I will add a slice of tomato too.

How do you normally eat avocado toast? I ordered it in a restaurant and the avocado was sliced with long pieces of bacon hanging over and a fried egg on top. It didn’t really lend itself to using my fingers but the toast was kind of hard to cut. I also found it kind of bland and figured it would be better to eat guacamole toast! Yours sounds almost like that.

I usually have my Avocado Toast as follows. Once the avocado is mashed, I add a little finely cut dry chilli or chilli flakes, finely cut onion, tiny bit of olive oil, crushed garlic and pinch of salt and pepper. I’ve known about avocado toast for around 15 years, right around the time I stopped eating anything with gluten or yeast. About 2 months ago, I learned I am NOT allergic to gluten or yeast! I’ve been having a ball, reacquainting myself to things I always loved. Today, I had part of a perfectly ripe & rich-tasting avo, and a few pieces of a nice NY rye with caraway seeds. Well, I finally got around to trying out the Avocado Toast that has got so many people abuzz. I went with fried egg on one, and panseared tomato slices on the other.
one tip for the avocado, I think that is worth it’s time, is to score the flesh of the avocado before scooping it, making a dice just to the skin. that way when you scoop it’s all diced up, and makes mashing much easier.
the tomatos are really fast to cook, just a lil olive oil in a pan, on very high, add the sliced tomatoes, I think wedges work better, it breaks up the skin, and makes nice lil bites. I just seared them till they were dark, on one side, about 2 minutes. seasoned with a little salt and pepper. I did set mine on a plate, since the toast wasn’t done, I think this allowed the tomatoes to drain just a little. might be good to avoid too much juice.

I use 12 grain bread for the toast. In a bowl I add the whole avocado mash it up. Then mix in the juice of 1 lime, 2 tablespoons minced onion, and 2 tablespoons of everything bagel seasoning. Spread on toast. I usually have some kind of fruit to round out breakfast.

I make my avocado toast every morning before I start my day. I use a pinch of salt. Pepper, garlic and Onion powder and sometimes some red pepper flakes! And 1/2 squeezed lime juice and mash away. I don’t like mine super creamy, I prefer mine a little chunky. For my bead I toast this diabetic flourless bread I finding in the freezer section of the store and I top it with a sunny side up egg, Swiss cheese and a sprinkle of fresh chive if I have any on hand!
