Apple Steel-Cut Oatmeal
Gluten free and vegan (see notes)

Simple Beet, Arugula and Feta Salad
Gluten free and easily vegan (skip the cheese)
“This is, quite literally, my new favorite salad! I have made it for several friends – who all have adored it – and have added it to my weekly food staples. I’ve never actually made it with pumpkin seed – I substitute pistachios instead, or omit the nuts altogether if I am not eating it right away, and the homemade balsamic is fantastic…YUMMMM!” – Franki

Turmeric-Spiced Whole Roasted Cauliflower
Gluten free and easily vegan
“This was the recipe that made me super interested in getting Jeanine’s new book. It’s so unique and stunning. I got the book and made this recipe today but I wanted to leave a comment on this original post awing over it. It was so easy to make. I served it over brown rice to catch the extra sauce, and I use unsweetened coconut yogurt to make the recipe vegan (worked great). I may request my SO make this for my next birthday dinner. It was incredible!” – Hailey
Autumn Kale Salad with Fennel and Honeycrisp
“Not sure why I waited so long to try this one – just exceptional. Made it for a supper club last night and it was such a hit. The fennel is such a perfect touch – cannot wait to use it more often. Luckily, I have enough ingredients to continue whipping this up throughout the week. Can kale salads please be your biggest chapter in the upcoming book? My absolute favourite!” – Emily
Hardy greens (arugula,
chard, collard greens & spinach)
Hearty Sweet Potato, Arugula & Wild Rice Salad with Ginger Dressing
Gluten free and easily vegan
“Wow – whoever said you can’t make friends with salad never tried this one. It’s sensational and thanks for the tip on toasting pumpkin seeds – never like them before and now they’re delicious! I halved the recipe and replaced half the oil with orange juice (watching fat intake) and looked forward to my 3 packed work lunches everyday. It was so good I’ve bought the book and recommended your blog to friends. (Colourful Beet this week) Thanks Kate!” – Heather
Quinoa Vegetable Soup with Kale
Gluten free and vegan
“I just found this recipe via pinterest! I made the soup yesterday and I absolutely love it!! Never thought of quinoa in soup but this makes so much sense! I am always looking for ways to add protein without adding meat so this is great and my whole family loves it! (I’m a college student by the way, not a mom, in case you couldn’t tell. lol) This soup is great for all ages!!” – Maya
Portobello and Poblano Fajitas
“These looked great so I made them for my meat eating family and they loved them!! I asked my hubby if he missed the meat and he actually said, “NO, these are delicious all by themselves”. Yay! I did like a bit more heat, so my hubby and I added some to our dishes. But the kids liked them just the way it was written.” – Belinda

Gluten free and easily vegan (see notes)
“My husband used this as inspiration for my birthday dinner Tuesday and it was so so so good! Even better have been the leftovers which means more days of no cooking! (I love to cook, but a break now and again is nice especially during birthday week). I love leftover risotto with a fried egg over the top. Thanks so much! Hi Kate. Just want to tell you that your website keeps going funny – I’m not sure if it’s just me or a wider problem. It zooms in so it’s just the title and the scrolling button disappears and I cannot move. It might only be me though – just thought you might want to know.
Well, that certainly shouldn’t be happening! I haven’t heard from anyone else experiencing that problem. Maybe try clearing your browser’s cache and see if that fixes it?
Hmm. I cleared my cache and so on, but still had the same problem. However, this time I can read it when I refresh the page. Oh, well. I love your recipes by the way and closely follow your blog!

Greetings from yet again another upcoming lockdown UK. I am thinking of you and poor Cookie… My husband was taken seriously ill very suddenly last August (he was in intensive care for over 2 weeks) and then later diagnosed with aggressive lymphoma. Fifteen months later we are in a better place after intensive treatment. Stay positive Katie and big big virtual hugs to you both I am about to look at some supper ideas from your gorgeous cookbook…
Hi Nina, I’m so sorry to hear about your husband. How very hard. In your time of grief, your kind words mean so much!
Aaaah thanks for the reply… my words are heartfelt and sincere…stay strong and positive. That little ‘Cookie’ is a fighter… both keep safe xps we are in lockdown again from tomorrow (5.11.20) for a month here in the UK. I will be using your amazing cookbook…. it’s well thumbed! Gorgeous book. Keep your faith up… x
Kate, I’m so sorry to hear about Cookie’s diagnosis but I have heard good things about chemo for dogs and how they tolerate it better than we humans do. Sending good vibes for her quick recovery.
I make so many of your recipes and thank you for your thoughtful, easy recipes.
Thank you for your thoughts, Susan!

Thank you, May!
I’m sorry to hear that Cookie is sick, but glad to hear that the treatments are working!
I wanted to tell you that my husband (a Chiropractor who is into a more natural approach to things) had checked out all of the dog foods at a nearby feed store (about 5 or 6 years ago) to see which ones had/didn’t have heavy metals in them. Of the brands that this feed store had (which were many) Blue Diamond was THE ONLY one that didn’t show heavy metals! I immediately switched to that brand. (I see that Costco now carries Blue Diamond, btw!) I started MAKING her food for her & only gave her the B.D. food if I was in too big of a hurry to cook for her.
Some human foods, as you probably know, are not good for dogs, so I made sure to follow good recipes that were created specifically for dogs.
I Hope This Helps. <3
Thank you for your kind words and sharing your research! I appreciate it. I’ve always been very mindful of what she is eating and continue to do so. I’m happy you found something that works well for you!

I am so sorry to hear about Cookie’s illness. Our dogs are truly family members who bring much joy and happiness to our lives. I will be praying for a complete recovery for your precious Cookie.
Thank you, Amy!
Hi Kate, I am so sorry to hear about Cookie. Sending you best wishes as you navigate her treatment, and I hope she recovers. Dealing with the serious illness of a furry companion is so painful, and I wish you both all the best.
Thank you, Jordan.
So sorry to hear about Cookie being sick. She will get well soon, keep my fingers crossed!!
I also have a dog named Cookie, he is a 11 year old brown dachshund. I love your recipes, thanks for sharing. Love from Germany, Patricia & Cookie
You have some great recipes listed here. But I was a little disappointed with your cabbage recipes. They were mostly slaw, salads and tacos. One can do so much more with cabbage. For example Polish noodles and cabbage, cabbage soups, Cabbage kielbasa Stew. Also there are many recipes with fried cabbage which even alone is very tasty. Cabbage is one of my favorite vegetables.
I’m sorry to hear you weren’t satisfied with my recipes. Perfect Roasted Cabbage is also a great recipe!
I just want to congratulate you and your husband on the birth of the new addition to your family! Your commitments have not increased – they have tripled, and I respect the time you continue to give us, your loyal followers :-)
Thank you, Sharon!
Love your recipes. It seems all the recipes have balanced nutrition.
